For our Caponata we use an old recipe, made excellent extra virgin olive oil from the olive Tree and the Silver healthy and intact and preserved collections Nocellara, only in water and salt, the most natural way that there is for them, with no additives or chemical preservatives and pitted.
We only use selected vegetables: Eggplant in our black Sicilian caponata, tomato, celery, onion and Siccagno Partanna Bisacquino, red vinegar, olive Nocellara, salt the salt pans of Trapani, fresh basil, capers, sugar and pepper.
